Hidrolize İpek Peptit
İpek; beyaz dut ağacının yapraklarıyla beslenen evcil ipek güvesinin (Bomyx Mori) larvalarının kendi metamorfozları için ördüğü kozadan elde edilir.
Antioksidan kapasitesi açısından zengin olduğu bilinen Böğürtlen, kızılcık ve yaban mersini gibi meyvelere göre beyaz dut %75 daha yüksek antioksidan içerir. Bu zengin antioksidan kaynağıyla beslenen krizalitler ipeğe bu özelliği verir.
Avrupa birliği 2015 yılında ipek proteininin kozmetikte kullanımını mercek altına almış ve bir güvenlik değerlendirmesi raporu oluşturmuştur. Bu rapora göre güvenli bulunan ipek peptitlerinin FDA listesinde gıda tüketimi için yer aldığını belirtmişlerdir. Yine Chakrabarti ve arkadaşlarının 2018 yılında Nutrients dergisi için yaptıkları “İnsan Sağlığında Gıdadan Elde Edilen Biyoaktif Peptitler: Zorluklar ve Fırsatlar“ isimli derlemede hidrolize peptitler arasında ipek fibroininden bahsederek FDA GRAS listesinde kabul gören katkılar içerisinde olduğunu ve bu tür protein kaynaklarının ticarileştirme için tercih edileceğini belirtmiştir.
